1餐具的使用及注意事项
不同的国家、地区的菜肴,在用餐时所借助的餐具往往大不相同,而西餐的重要特征之一就是使用刀叉,除刀叉之外,西餐的主要餐具还有餐匙、餐巾等,然而最常见的餐具有盘、碟、水盂、牙签等。
西餐的刀叉使用的基本手法就是左手拿叉,右手拿刀,在正规的西餐宴会上,通常讲究吃一道菜要换一副刀叉,也就是说每吃一道菜都要使用专门的刀叉。
既不可胡乱拿用,也不可从头至尾只使用一副刀叉。
使用刀叉,可以向侍者暗示用餐者是否吃好了某一道菜肴。
与人攀谈应暂时放下刀叉,其具体做法是将刀向右,叉左,刀口向内、叉齿向下,呈‘八’字型摆放餐盘之上,其含义是此菜尚未用毕。
但要注意不可将刀叉摆放为‘十’字型,西方人认为那是不吉利的图案。
餐匙一般在西餐里至少会出现两种,个头较大,头略圆的称其汤匙,与餐刀并列纵放,个头较小,头略尖的称为甜品匙,与吃甜品的刀叉并列摆放。两种汤匙各有各的用处,不可互相替代使用。
使用餐匙,以下必须高度重视,餐匙除饮汤、吃甜品外,决不可做它用,已使用的餐匙也不可再放回原处或是令其直立与餐点、茶杯中。餐匙保持干净,不能放入餐点中搅弄。
餐匙取食不可过量,入口并一次用完。
正餐内,餐巾所发挥的用途有,为服装保洁,揩拭口部,掩口遮羞,进行暗示用餐的开始、结束及暂停。
餐巾通常会叠成一定图案放置右前方的水杯中,或是平放在右侧桌面上,面积也有大中小之分,无论哪种大小还是形状都应平铺于自己并拢的大腿上。
切记不可抖动餐巾,不可把餐巾掖于领口、围在脖子上、塞进衣襟内,或是担心掉落而将其系在裤腰上。
2酒
酒,在一般情况下,是用来对佐餐、助兴的各种酒类的一种统称。
在一般情况下,饮用不同的酒水,要用不同的专用的酒杯。
在每一位用餐者面前桌面上右边餐刀的前方,大多都会横排放置三四只酒杯,取用时,可依次由外侧向内侧进行,亦可‘紧跟’女主人的选择。他们之中,香槟杯、红葡萄酒杯、白葡萄酒杯及水杯往往必不可少。
3西餐礼仪要求
由于正统的西餐礼仪出自古代宫廷,并且相延已久,故此其程式化的规定极多。
其中最重要的,是要求用餐者严格约束个人举止,力求使之高雅动人。

中餐礼仪和西餐礼仪的差异,虽然有很多细节上的不同,但是主要表现在以下四个方面
(一)上菜的顺序和摆放不同
大部分中餐上菜时大都按照汤、主菜、主食、餐酒或水果的顺序,而西餐则大都按照开胃菜、色拉、汤、水果、餐酒、主食、甜点和咖啡的顺序上菜。中餐在上菜时会一次性将所有的菜肴上完,同时摆放在餐桌上,而西餐则是用完一道菜再上另外一道菜。
(二)餐具不同
中餐的餐具一般都比较简单,多以杯、盘、碗、碟、筷、匙等为主,而西餐的餐具则是五花八门,享用不同的菜肴也会使用不同的刀叉,餐具用法讲究颇多,即使是喝酒的玻璃杯,也要同所喝的酒相对应。
(三)入座座次不同
中餐用餐时的座次大都是按照长幼尊卑来定,“尚东为尊”或“面朝大门为尊”,而西餐用餐时,面对门的且离门最远的那个座位是女主人的,与女主人相对的是男主人的座位。女主人右手边的座位是第一主宾席,一般是位先生,男主人右边的座位是第二主宾席,一般是主宾的夫人。
(四)着装要求不同
除非在正式场合,中餐对于就餐者的着装要求并不高,穿着都比较随便,而西餐对于就餐者的要求比较高,特别是在高档的西餐厅,男士要穿着整洁的上衣和皮鞋,并且要打领带,女士要穿套装和有跟的鞋子,无论是男士还是女士都不可穿休闲服到高档西餐厅用餐。
西餐礼仪主要是指欧美地区的用餐礼仪,虽然各个国家之间对于细节的要求不同,但是西餐礼仪总体上讲是以欧洲大陆的西餐礼仪为主流,尤其以法国西餐礼仪为代表。西方人在餐桌上所形成的这套规范礼仪,并不是与生俱来的,也要经过后天的了解和训练。作为“外国人”的我们,要真正地做到“入乡随俗”就必须先对西餐礼仪有一个系统完整的了解,并不断地强化训练,注意其中的每一个细节,我们也都可以变成“绅士”和“淑女”。
