酸奶能代替牛奶吗?这是一个让很多人纠结的问题。答案很简单,就四个字:完全可以!
酸奶能代替牛奶吗为什么说酸奶可以代替牛奶呢?这就需要从牛奶和酸奶的营养成分上说起了。
我们先来看看牛奶里都有什么。就像牛奶的包装盒上标识的那样,不管是巴氏奶还是常温UHT奶,通常100克全脂牛奶中,含有大约3%的蛋白质,3.5%左右的脂肪,以及5%左右的碳水化合物。除此之外,100克的牛奶中还含有110毫克的钙质。若是低脂或者脱脂牛奶,其中的脂肪含量则会更低一些。
至于酸奶,通常原味酸奶的各种成分和牛奶里的差不多。这不稀奇,因为酸奶就是直接从牛奶发酵而来的。牛奶经过嗜热链球菌和保加利亚乳杆菌这两种乳酸菌的发酵,让其中的一种名为酪蛋白的蛋白质互相交联成网状,网罗住了牛奶里的其他物质,从而形成了一种像嫩豆腐一样的质地,这就是凝固型酸奶。若是在发酵后把凝固的酸奶搅拌一下,就成了能流动却又比牛奶粘稠许多的搅拌型酸奶。如果再加入其他的果蔬等成分,我们就得到了风味酸奶。由于加入了一部分果蔬,因而风味酸奶中牛奶的各种营养物质的含量会相应略低一些。
通常我们提倡大家喝牛奶,最最主要的就是因为乳制品含有丰富的钙质,而且其中的钙质很容易被人体吸收利用。这一点很难有其它类型的食物能代替。其次是因为牛奶里的蛋白质也是一种很不错的蛋白质。在牛奶发酵成酸奶的过程中,钙质并没有损失。蛋白质虽然被乳酸菌水解了一部分,但是却变成了更容易被人体吸收的多肽。因而从这两个方面来说,酸奶并不比牛奶少什么营养。
酸奶不仅仅是不比牛奶差,实际上它要比牛奶还更好一些。比如酸奶中的大部分乳糖在乳酸菌发酵的过程中都被水解了,因而相对于牛奶而言,不容易引起乳糖不耐受,更适合具有乳糖不耐受的人。酸奶中还含有大量的活性乳酸菌,在经过了胃液和各种消化酶的折磨后,仍然会有一大部分活菌抵达肠道。虽然乳酸菌并不能长期驻扎在肠道中,仅能存活几个小时到几天,但是在这段时间内乳酸菌仍然能够发挥一定的益生菌功效,有助于帮助消化和恢复肠道正常菌群。
对于婴儿来说,酸奶更是要强于牛奶。由于牛奶中的蛋白质有可能会引起一部分婴儿发生过敏症状,因而一般推荐至少在一周岁之后才可以喝牛奶。像前面提到的,由于在乳酸菌的发酵过程中,酸奶里的大部分蛋白质被水解成了更容易被消化吸收且更不容易致敏的氨基酸和多肽,因而一般认为从六个月起,就可以在添加辅食的同时逐渐给宝宝吃酸奶了。
总之,就算不考虑酸奶那比牛奶更好的口感和味道,仅从营养的角度来看,用酸奶代替牛奶也是完全可以的,而且酸奶比牛奶更胜一筹。其实,若是有条件,不妨变换着选择多种多样的乳制品,牛奶,酸奶,甚至奶酪都可以。如此这般,既能享受各种不同的风味,又可以获取优质的钙质,何乐而不为?

大地上的读书人
有人说,读书最好的年龄是十五六岁,那时记忆力好。但那时我没有书读。我生活的村庄离书店有几十公里,再说家里也没有钱。我借书看。《西游记》连环画、金庸和古龙的武侠小说、三毛的散文……抓紧分秒地读。
假期在家里做农活,书随身带着,挑一担谷或柴草,歇息时就摸出来看几页,到家时天都黑了。上中学是在镇上,来回几十里。放学时,同学们叽叽喳喳蹦蹦跳跳,我落在后面,图个清静,能够摸出书来看。
大地之上没有书桌,没有书房,只有无限的风景。我捏着印有方块字的纸,缓缓走在山路上,心情随文字一路铺陈。看累了,就眺望镶着金边的云,落日远远地挂在山头。我忍不住想奔跑,想歌唱,和我的书。天黑透了,这才拔足狂奔。少年时代的书,都是在路上边走边读的。村里的人常常会在路上看到这样一个孩子,眼睛勾在书上,走走停停,有时微笑,有时皱着眉头。总之是村里的书呆子,永远成不了庄稼地里的一把好手。

其实这是一个有故事的小镇。
上个世纪抗战硝烟弥漫,中国似乎摆不下一张书桌。无数的文化单位开始西迁,迁向中国的腹地,迁向有深山大河屏障的僻远城乡。一大批赫赫有名的读书人如傅斯年、李济、董作宾、金岳霖、梁思成、林徽因等,选择了这个贫穷而偏僻的小镇蜗居,保存学术的薪火。
在这样的环境中,读书人都寄居于庙宇、祠堂、农舍、仓库,空气潮湿,缺医少药,很多人因此染上沉疴。最要命的是,没有书,没有实验器材。唯一带有存书的机构是当时的中央研究院史语所,让读书人稍微得以慰藉。但是,要到这里殊不容易,我曾经在李庄镇外寻索,穿过一大段弯弯曲曲的田埂,还有一片树林,然后爬500多个台阶,才找到山峰顶部的一个山庄,这就是当年的史语所办公遗址,现在已改为学校。
就是在这样的山路上行走,我突然回到了少年时代。
不同时代的读书人,都是在大地上读书,天作幕,地做席,人立天地间,携一书,与千年的精神脉络相守。外面的风雨雷电都化作这一画面的背景,渐渐消隐,而在书间、在人间印证过的心灵之音却渐次成为主角。
这样的生活苦吗?我翻遍那个时代的读书人在李庄留下的文字,看到的只有读书、研究、做学问的丰满记忆,更多的是对国运、天下事的远视,而不见对物质困苦的埋怨。
如果可以穿越,我说不定能看到这一幕:在如豆的煤油灯下,考古学家董作宾躬身简陋的斗室,手写考古史上开天辟地的煌煌巨著《殷历谱》,每写一句,三搁其笔,往返于古籍和甲骨文标本之间,核对求证;同济大学的生物学家童第周和夫人、儿女以及学生,携带大盆小盆,兴致勃勃地到野外捕捉青蛙并收集蛙卵做实验。在李庄的田野沟渠间,人跑蛙跳,你追我赶,泥水四溅;中国营造社的梁思成兴致勃勃地画下李庄旧旧的东岳庙的建筑构式图,旁边是同济大学学子的琅琅书声……
在彼时的李庄,世界很喧哗,有人做了高官,有人发了国难财,也有读书人因此眼红,放弃书桌,奔向豪门之间。剩下的那一群读书人,面带菜色走在大地上,孜孜埋首于卷册笔墨之间,自得其乐。

Since the 1970s, scientists have been searching for ways to link the brain with computers. Brain-computer interface (BCI) technology could help people with disabilities send commands to machines.
Recently, two researchers, Jose Millan and Michele Tavella from the Federal Polytechnic School in Lausanne, Switzerland, demonstrated (展示) a small robotic wheelchair directed by a person’s thoughts. In the laboratory, Tavella operated the wheelchair just by thinking about moving his left or right hand. He could even talk as he watched the vehicle and guided it with his thoughts.
“Our brain has billions of nerve cells. These send signals through the spinal cord(脊髓) to the muscles to give us the ability to move. But spinal cord injuries or other conditions can prevent these weak electrical signals from reaching the muscles,” Tavella says. “Our system allows disabled people to communicate with external (外部的) world and also to control devices.”
The researchers designed a special cap for the users. This head cover picks up the signals from the scalp(头皮) and sends them to a computer. The computer interprets (translate) the signals and commands the motorized wheelchair. The wheelchair also has two cameras that identify (find or discover) objects in its paths.
